Spicy Tuna Melt

Usually when we go to a Sub place or a sandwich place, I prefer ordering tuna wrap or a tuna salad sandwich rather than any chicken item! Thats always on the top unless they don't have it!
There was a cafe place in the hospital where they used to make amazing tuna melts. A hospital and amazing food doesn't go together right!! But yeah they used to!
Tuna melt is a hot tuna sandwich with cheese melting. The bread is toasted to be crispy!...its so amazing!
I have tried making it at home for lunch and very regularly I make it to get my crispy tuna melt fix :))
I use tuna in a can which is in water, but you can use the one in oil.
To make it spicy, I use Sriracha. Its very spicy, so use it in moderation, only how much you can handle.
Celery and water chestnuts give a nice crunchy texture to the salad. Use it only if you like it.
Add only enough Mayo, so that the salad isn't that runny, but is on the thicker side. Because when you toast it on the sandwich, it might run out!

Ingredients:

2 slice of bread ( I used whole grain wheat bread)

1 can of tuna (preferably in water, but you can use the one in oil, if you like, or better yet get the store bought tuna salad to make life easy) :)
2 tbsp of mayonaise (or less)
1 small stalk of celery, chopped
few water chestnuts, chopped

Sriracha as required or any other hot sauce
1 slice of good cheese, I used pepper jack, cos I love it

Method:

Toast the bread lightly, not brown, just very lightly, so that when we toast the whole sandwich later the bread gets crispy.
Mix the tuna with mayo, celery and chestnuts.
Heat a tawa or a pan. Add a few drops of oil to it.
Spread the tuna salad on one slice and put the cheese slice on the other.
Sprinkle a few drops of sriracha on the tuna salad.
Make into sandwich and toast on the pan, till it get hot, toasty and the cheese starts to melt.
Serve hot with pickles. :))
Enjoy!!!
