Garlic Mini twisted rolls with Pillsbury Biscuit dough - Semi HomeMade!








 Though I love to bake and eat sweets, I am not completely and sweet person. If I get a chance, I would probably go for spicy dishes first, then to the sweet. But I am won't omit sugar completely! :)

I love sugar, tho I can't eat it now a days...it tempts me so! I try to keep myself away from it basically for health reasons. Especially this season, when we look for comfort food and when we are surrounded by chocolates. I do love me some sugar! But ya, for us who are trying to go healthy and all....I keep it to the minimum. This has been a trial using Pillsbury Biscuit dough, but I would surely try to go for whole wheat if possible. To eliminate the use of any extra butter, I used coconut oil. Now a days this ingredients has been given rave reviews as one of the healthiest ingredient around. I am going to try to incorporate it into regular dishes too, other than only baking, which I have been doing till now!

So with Valentine's day around the corner, and with so many 'sweets' around, I thought how about going for something spicy instead. Something easy, garlicky and spicy too. These Mini Garlic Twisted rolls are made of Pillsbury biscuit dough which comes in a cardboard can. Isn't that easy. All you need is this dough, chopped garlic, chopped coriander and few other stuff which may already be in your pantry. I like to have this as a side dish with a salad or soup. It takes under 20 minutes from start to finish. Just a simple way to whats already available and making use of it!


Time: Less than 20 minutes 
Makes 10 rolls

Ingredients:

2 rolls of Pillsbury biscuits dough

10 cloves of garlic, chopped tiny
small bunch of coriander leaves, chopped
1/2 tsp garlic powder
1/2 tsp red chili flakes (optional) (can use chopped green chili instead)
dry Italian seasoning (optional)
1/2 tbsp coconut oil (can use olive oil instead)











Method:

Pre-heat oven to 450 degrees F.

Lightly grease a baking sheet and keep aside.
Melt the coconut oil and keep aside.

Open a can of Pillsbury biscuits dough.
Lightly flour your surface and attach to dough pieces. Roll them out to make it long or oblong.

Brush on some melted coconut oil. Put some garlic, coriander and red chili flakes on the dough.
Now roll the dough into a log.
Cut in the center of the log to make two sides for twisting.
Twist both the pieces and make a circle out of it.

Brush again lightly coconut oil of the top. Sprinkle garlic powder and Italian seasoning on the top.
Lay them on the baking sheet and bake for 8-9 minutes.

Serve them hot just plain or with some chutney!

The first one is plain for my little kiddo, second and third are experiments - with 3 rolls and with 1 roll.
I think using one roll makes it too small and using three makes it too big. Two rolls were a perfect size, but surely you can do what you like.



I just went crazy on the pictures - Sorry for that! But this is my first time trying to edit using my Mac and I am kinda lost. I am still learning and I hope to learn soon! It really get frustrating when you try to switch from one operating system to the other.

Coming to my Handiwork -  I made these cute Valentine's Day bookmarks for my kid's classes.
They are made using Paint chips on one side and scarpbook paper on the other. Small hearts punched out on the side and tied up with a ribbon. Arn't they cute!!

3rd Blog Anniversary with Condensed Milk kind of Zebra/Marble Cake!






I totally completely forgot about my blog anniversary (which passed by me couple of days ago). This tells you how much out of the loop I have been with my blog! How much I wish I could start posting everyday, but it just not happening. Lots of other stuff take up my precious time. And not only that I have been trying my other hobbies and so they have also kept me away from blogging. Well thats fine!!  :)

Things are going good on my side! How are things on your side? Kids in routine with school and activities and even our life falls into routine with them.
Holidays have come and passed us by. So there goes another year without snow and terrible cold temperatures. Can't complain as we have enjoyed every bit of it! Though I do like snow and wish sometimes that we had snow, won't complain as its not that far away, only a 3 hour drive and we get snow! With that on the back of my mind, I am not missing snow or the cold temperatures! My East Coast friends - I love you all!! :)

Other thing that I am totally hooked on to is Pinterest! I see so many great ideas, recipes and DIY stuff that I am so tempted to try all of them! I have already made a cowl and knitted a few scarves. If anyone is interested you are welcome to checkout my Photo Blog My PicXels. Yes! after a good year last year which was my first year to do a photo blog, I decided to continue with it again this year :) simply because I think I learned a lot about photography, but also because I love clicking pictures! So if you have time do check it out. Right now I am doing a mix of phone clicks and camera clicks so that I am not bored at all. :)


Since I forgot my Blog anniversary, I haven't had much time to prepare. I chose this simple, few ingredients recipe, which I have made a few times now and is fool proof. The only thing I tried new was to try the zebra pattern, hoping it will come out good! ............but I think I could have added more cocoa powder for the darker lines, so more like marble cake maybe! The lines came out very light in color....but overall it tasted good! YUM!!



Ingredients:

1 cup flour
4 eggs
4 tbsp butter (melted)
2 tsp baking powder
1 tbsp vanilla extract
1 can sweetened condensed milk (nearly 400g)

2 tbsp Unsweetened Cocoa powder (increase this for darker lines)

Method:

Mix all ingredients, except for the Cocoa powder into batter using your mixer.

For the chocolate part:

Divide the batter into 2 halves. To one half add 2 tbsp Unsweetened Cocoa powder.


Grease a pan with some butter and flour it.
Preheat the oven to 350 Degrees F.

Using a 1/4 cup, pour both the batters in alternate pattern. That is, once pour the regular batter in the middle of the pan. On top of that, pour the chocolate batter. Do this until all the batter is used up.

Bake it for 30-35 minutes.

Junnu - A Sweet Milk Pudding

This is my first guest post. Sreevalli of Ammaji's recipes was so kind to ask me to do a guest post long back. But due to my computer problems I didn't get a chance to get to it till now! Thanks Sreevalli for asking me to do it! :)
I chose this simple sweet recipe for this special post called "Junnu". I am sure whoever has tasted this in the past would really like to revive this memory yet again.



The first milk of cattle after delivering a calf is called 'Junnu paalu' in our language, 'paalu' standing for milk.
This is steam cooked with some jaggery and black pepper to make this awesome pudding known as 'Junnu'.
Because of the thickness and creaminess of this milk, it forms a delicate pudding with a creamy texture without the addition of any other ingredients.
Well this was in the times when the 'first milk' was readily available like in the villages or even in the city, when your milkman would bring 'Junnu paalu' and offer it to you for a nominal price.

I have probably eaten the actual Junnu only once or twice in my lifetime, but the delicate taste has forever made a mark in my brain!
Now during present times, its very rare that we can get 'Junnu Paalu'. So I tried to make this delicacy using the ingredients readily available to us and I think it came out perfect, absolutely just like the actual 'Junnu'.
But I had to use eggs and so its not eggless like the actual and real 'Junnu'. Maybe some day that also will be possible. :)
Its a very simple recipe which churns out this amazing and delicious Milk Pudding. The combination of jaggery and pepper in  the real junnu is perfectly compensated by the sweetness is condensed milk and black pepper. The eggs bring out the right texture in the pudding, very close to the real one.


Ingredients:

1 can Sweetened Condensed Milk (14 oz)
2 cups milk
2 eggs
pinch of black pepper
1/4 tsp Cardamom powder

Method:

Whisk all the ingredients together in a bowl along with eggs
Grease a steel bowl ever so lightly with oil.
Steam cook it in a pressure cooker for about 30 minutes.
Remove and cool before flipping over onto a plate.
Flip it twice to bring it right side up.
Serve warm or cold.
Enjoy!!!

2 minute Microwave Sponge cake in a mug with a sweet chocolatey inside




Days just fly by when kids are at home. Keeping them occupied and entertained is very big hassle which I guess every Mom faces! Same story goes with me. Especially my younger one....he either gets bored very soon or wants to do tons of stuff all at the same time. And so my struggles with him continue...in a sweet way!

Its been a while I posted here...tho I want to post, time just passes me by!....Even tho I am hosting an event on my blog....I am not finding time to write up a post! I feel very bad that I am not able to post. Its not that I am not cooking, but I am, but just to write up and edit the pictures, its become difficult. Something or the other keeps me away from my Laptop.
And then in between there are other stuff which have kept my mind in a turmoil!! I hope everything will be better by the end of summer. Let see...

So in order to send something to my own event, I made this Sponge cake in a mug. I wanted to make this long ago, when I have seen the chocolate version making rounds in the blogosphere. Just to give it a little twist, I inserted Hershey's chocolate kisses to the center to give kids a sweet surprise. And who wouldn't love a cake made just under 2 minutes??


For 2 mugs

Ingredients:

1/2 cup flour
less than 1/4 cup sugar
1/4 tsp baking powder
1 egg
3 tbsp butter
pinch of salt
1/4 tsp vanilla extract
1/2 of 1/4 cup milk
2 Hershey kisses for the interior for each mug

{1 minute on high + 20-40seconds as needed. (on high power - 1000 watts)}


Method:

Mix all the dry ingredients in a bowl. Add in the wet ingredients and mix together.
Pour in 2 microwave safe mugs until about 1/3 full.
Put 2 Hershey's Kisses in the center, into the middle of the batter. they may not get covered completely but, when the batter cooks, they will get covered.
Microwave on high (1000 watts) for a minute.
[you will see the batter rise high and it will go back down again]
After a minute, microwave for about 20 seconds and check if its done, otherwise microwave for another 20 seconds. Microwaving for too long will make the cake dry.
Let it sit in the microwave for 2 minutes.
Remove and its ready to be served. You can let it completely cool or eat it just so!

Warm Spiced Apples with nutty granola topping with ice cream aka Instant Apple crisp

For the 7th and final day to Group 1 of  BM #16 here is a perfect summer and fall dessert!
I tend to divert towards warm desserts even in summer. Warm desserts with cold ice creams are just to tempting and are nothing but heavenly to enjoy on warm or cool summer nights! My older son has taken after me and along with me enjoys these warm desserts.

So what can we put under these warm desserts? Warm brownies, warm chocolate cake, warm cookies all served with cold vanilla ice creams come under my favorite list. If any restaurant has this on their menu, we tend to order it along with 4 spoons. Since one person wont be able to finish the big piece of dessert which the restaurants serves, we all share it, trying to see who gobbles it up first!

But I am even partial to our warm Indian desserts and can't stop from mentioning warm jalebis with rabri, hot gulab jamuns with ice cream and many many more.

The best thing is when preparing the same at home, we are able to control the portion size and are able to make it in a healthier way, than we get at a restaurant.

Here is an easy and simple warm dessert which can be put together in under 1 hour if done by the stove top way. Warm cinnamony apples, topped with crunchy nutty granola on the side of ice cream. Aren't we having the best of both worlds?? Now I do consider this dessert healthy mind you! Apples, come on! whole fruit!!

I used brown sugar to sweetened the apples up, but you surely can try with a sweetener or eliminating it totally!



Ingredients:

4 good firm apples (baking apples or any apples if good, I used Galas)
3 tbsp brown sugar
1 tsp lemon juice
1/2 tsp Cinnamon powder

To serve: 1 tbsp crunchy granola with nuts (home made or store bought)
               1 scoop vanilla ice cream


Method:

Wash and peel the apples. Core and slice them thin.
You can either stew the apples on stove top or in the oven.
Mix the apple slices with the lemon juice, brown sugar and cinnamon powder

For Stove top: In a sauce pan, cover and cook until the apples are tender and cooked, stirring from time to time.
For Oven: Pre-heat oven to 375 degrees. Put apples in a oven proof dish, cover with a tin foil and cook until tender or cooked.

When cooked, remove from heat and cool to warm.
Serve topped with crunchy granola and cold ice cream on the side.

Minty Mint Lemonade

For today, I have a easy breezy recipe which all kids love! My kids love it a lot and i enjoy it with them too. I am sure no kid or adult is going to say no to this refreshing drink! It can be made to how you like it. How sweet or how sour you like it! How minty or how lemony you like it! How cold or how warm you like! Well my kids think it tastes the best with few cubes of ice and a sprig of mint to smell and taste the flavor in the lemonade. Yes its Minty Mint Lemonade...cool cool and cold cold Minty Lemonade! A very refreshing summer drink which is sure to cool everyone down in this summer heat!

I like to crush the mint leaves in the juice to get the flavor out of the leaves into the drink and strain it to serve for the kids. If you don't mind eating the leaves along with the drink, you can leave them in the drink.


Makes about 4 cups
Ingredients:

1 cup of sugar (more or less, depending on taste)
3 cups of water
1 cup freshly squeezed lemon juice (more or less)
a bunch of mint leaves, about a 1/4 cup

Method:

Add sugar into 1 cup of water and bring it to a slow boil. Make sure all the sugar is dissolved. Let this cool down.
Add the rest of water and lemon juice together with the sugar syrup.
(Add the sugar syrup and lemon juice, little by little, and taste to see if you are not making it too sweet or sour for your taste)

Add the mint leaves and crush them with the back of a wooden spoon.
Strainer the mint leaves and chill till serving time.
Serve over ice or just like that with a slice of lemon and a leaf of mint.

Mini bagel pizzas




Another crowd pleaser and kid friendly dish for any party or for a quick snack at home is this very simple and easy dish known as Mini bagel pizzas.

Which kid doesn't like pizza right!? Best of all, you can have any topping your kid wishes. I think this dish is too good when you want to involve the kids in cooking but don't want to deal with a whole lot of mess of the dough and flour.

These bake quickly and so the kid's don't have to wait to a long time for their snack either. since the bagels are already cooked and it only takes a couple of minutes for the cheese to melt on the top, it can be made in a jiffy!

These are perfect to make on very tiny bagels to the very large ones. But the mini bagels or the medium sized ones are better for the kid's to handle, so I prefer them. You do find these in frozen section of the grocery store, but they are easy and quick to make so why go for the packaged one?

I put whatever topping my kid's like at the point of time and this time they wanted only cheese, so that's what they got!


I used three bagels as a snack, you can use how many ever as you wish!

Ingredients:

3 mini bagels
1/2 cup of cheese
1/2 cup of Ragu or marinara sauce

Method:

Preheat broiler to high.
Halve the bagel and spread the marinara sauce on both sides of the bagel.
Sprinkle cheese along with any other toppings you wish.
Put under broiler for 3-4 minutes or until the cheese melts.
Remove and serve immediately after a minute of cool down or they will be very hot!!

Jam cookies out of premix sugar cookie dough



I love to have dough handy, so that I can make what ever I think of easily and without thinking twice about whether I have this ingredient in my pantry or that stuff in my pantry! I am talking about ready to mix dough and mixes. Even I like to keep Murruku mix ready with me. In case I need murukku quick within an hour or so, this really comes handy, as it is pre-mixed, I just have to make them.

In the same way cake mix, pancake mix or cookie dough  mix all are very handy. I know they are very easy to prepare from scratch but sometimes using such mixes is a no-brainer really and can be made in very less time.
I use sugar cookie dough mix because, making this from scratch always eluded me. I don't know why I struggle so much with this, but I do! Nobody is prefect, maybe someday I will perfect it!:) But for now I am happy using this and since my kids like to eat cookies from time to time, its very handy. The good part is that it doesn't only have to used as a sugar cookie dough, but can be transformed into other types, like here I made jam cookies out of the same premix. They are very easy to prepare, works well when you are in a hurry or for potlucks or picnics, even for birthday parties.

I used strawberry jam here but you can use any jam you like and wish. Jams work much better than jellies, as jellies tend to liquefy more when heated.
I prepared the dough as per directions on the pouch, but felt the dough was pretty sticky to get a good shape. For drop cookies that's fine , but if you want to flatten it out and put jam on top, that won't work. So I added in extra all purpose flour to make it less sticky and where they dough can be rolled into a ball and flattened.




Ingredients:

1 pouch sugar cookie mix
1/2 cup butter at room temp, or softened butter
1/2 cup all purpose flour ( more or less as needed)
1 egg
1/2 cup strawberry jam

Method:

Grease a baking sheet lightly with butter and keep aside.
Pre-heat oven to 375 degrees.
Mix all ingredients according to the directions on the pouch.
Add flour little by little till the dough is less sticky and can be rolled into a ball by hand.
Make golf sized balls and lay them on the baking sheet.
Gently flatten them, more in the middle to get a dip in the middle.
Add a little bit of jam in the center.
Bake for about 8-10 minutes or until the edges start turning brown.
Remove and let them cool before serving.

Coconut Chocolate chip Pecan Banana Bread



Ya I know that's a long name, but what else could I name it?...It does have all the said ingredients and the name should reflect what the product consists of, so that's why the long name :).

I have made so many Banana bread these past few days....why? because I had tons of bananas which were past the eating point. The best way to consume them is to make a delicious banana bread and all are done!

What I noticed is that if I added chocolate chips to the banana bread, it would be finishes faster than the plain one. And I wanted to try a coconut banana bread, so went ahead and tried it! I make only one small loaf at a time, double it if you want a bigger loaf.

I love warm desserts and my old son has taken after me. We both tend go in the direction of warm desserts like warm banana bread with cold ice cream or warm brownie with ice cream. This has been one of our favorites now since I have been making this very often!



Ingredients:

Wet Ingredients:

1/4 cup butter @ room temperature
1 cup mashed bananas, about 3 medium sized
1 egg
1/2 tsp vanilla extract
1/4 cup milk

Dry Ingredients:

1 1/2 cups All purpose flour
1/4 tsp salt
1 tsp baking powder
1/4 tsp baking soda
1/2 cup light brown sugar

1/2 cup unsweetened shredded coconut
1/4 cup mini semi-chocolate chips
1/4 cup chopped, roasted pecans, walnuts

Method:

Grease a loaf pan with butter and keep aside.
Pre-heat oven to 350 degrees.

Mashed bananas. Mix in butter, egg, vanilla extract, milk and brown sugar.
In another bowl, stir in the rest of the dry ingredients together, expect the coconut, choco chips and walnuts.
Mix in the dry ingredients with the wet ingredients slowly, being careful not to over mix.
Add and stir in the coconut, choco chips and walnuts.
Pour into loaf pan and bake at 350 degrees for 30-40 minutes or until a tooth pick inserted comes out clean.
Serve when warm or cold.

Vegetarian Tostada with Papaya Orange Pico de gallo




 Wishing all the women in my life, and all the people I have come across in this blogging journey a very happy "International Women's Day".
And also to my Mom who has been my inspiration who has been supportive in all ways through this Journey.
My MIL, who has given me some good and interesting recipes and is supportive too.
And my Sister, who has been a person who I can lean on to when I need any kind of help and also been supportively useful in all ways! :) Don't we all like to take advantage of little sisters! :)

Today is also Holi - a colorful festival, celebration in India. It falls on the full moon day towards the end of winter season. It celebrates the start of farming season for good harvests and good fertile lands. There is also a religious aspect to it, which is the end of cold and darkness and bringing in the purity in the form of light and brightness.



Holi is the start of spring season which brings in different colors, this shown by playing with colors, colorful water among young and old.
Brings back memories of when we were in India, and used to watch kids play with colors. Yes watch, I never played much Holi, but did enjoy watching kids. But loved to eat all the different sweets made on that day.

So technically, I should be making sweets, but I thought why not combine Women's day and Holi and make something which is colorful and healthy for both occasions.
Isn't celebrating being a woman, mean eat healthy and as a celebration for good harvest and fertile land, also mean lots and lots of vegetables and fruit! :)


 
So for this occasion, I came up with a Vegetarian Tostada with Papaya Orange Pica de Gallo. A very easy dish which tastes just as wonderful. Lots of fruit and veggies on the top making it healthy and guilt free.
So as the story goes, I brought all the ingredients for making this and also brought canned black beans...only didn't see that I picked up the wrong can. It turned out to be refried black beans.

My first idea was to spread fresh salsa on the corn tortillas and then pile it with the pico de gallo, which was going to contain the whole black beans.
But since it was refried, I made it this way - spread the refried on the bottom and piled it with the pico de gallo.
the fun part of this dish is that you can modify it the way you like it. Add as many ingredients as you wish and make it as yummy as you like!! :))

This can be eaten as a appetizer or as a side item on a lunch menu. The crispy corn tortillas and the toppings should be kept separate, so that it allows each person to put what toppings they like.




Ingredients:

Papaya Orange Pico De Gallo:

1/4 piece of Papaya, chopped small
half of an orange, fiber taken out and chopped
1 tomato, chopped
1/4 cup corn, frozen or cooked fresh
1/2 onion, chopped
1-2 green chili or 1 jalapeno, thinly chopped
few cilantro or coriander leaves
1/2 to 1 Tbsp of Lemon juice
Salt and pepper to taste

Method:

Mix all the ingredients together. Adjust salt, pepper and lemon juice according to taste.




Ingredients for making the Tostada:

6 corn tortillas, 6 inch
(2 corn tortillas per tostada)
1 avocado, chopped
1/2 cup refried black beans
(you can also use whole cooked / canned black beans instead)
Shredded cabbage
1/4 cup mix of Mexican cheese
(you can use fresh variety of Mexican cheese instead)



Method for assembling the tostada:

Pre-heat the oven to 400 degrees.
Spray the corn tortillas, on both side of each one, with olive oil.
It take about 10-15 minutes for the tortillas to crisp up, when placed two, one on top of each other. So you have 3 sets. You can also crisp them, placing them individually too.

Remove avocado from its skin. Add some lemon juice, salt and pepper. Keep aside.

You can heat the refried black beans to warm, if you want...or if you like it cold you can use it just like that.

After the tortilla crisp up, spread the refried beans on top of it.
Place some shredded cabbage on it.
On top of that, add the Pico de gallo and avocado.
Sprinkle some cheese on the top.

Serve immediately or the tortillas will start to get wet from the pico de gallo and soften it.
Enjoy!!!


Variations:

Whole beans instead of refried beans.
Lettuce instead of cabbage.
Spread salsa instead of refried beans.
Use chicken to make it more interesting!

There can be more variations, just be creative :).

For the final day of the Marathon, I took a simple chocolate chip cookie recipe and turned it into a cake, that's why the name 'Chocolate chip cookie cake' :)

I used a 8in pie tray to bake this 'cake'. You can use either use a pie tray or a cake pan, but make sure it isn't too big or it will become a cookie instead of a cake. You can surely bake big cookie, but its going to be a chewy cookie so its going to be a soft one.
I just made it little thicker, so it turned into a cake.
I cut it into triangles, to get a smaller serving size (I cut into even smaller triangles than the ones in the picture :))

I lined the tray with parchment paper, but you surely can grease it and dust it with flour, to get a perfect round shape.
Its an easy recipe and I am sure the kids loved it because its something different, in a different shape anyway, but has the same cookie taste!



Ingredients:

Dry:

1 cup all purpose flour
1/4 cup white whole wheat flour
1/2 tsp salt
1/2 tsp baking soda

Wet:

1/2 cup butter (room temperature)
1/4 cup white sugar
1/3 cup packed light brown sugar

1/2 tsp vanilla extract
1 egg

1/4 cup milk chocolate chips


Method:

Pre-heat the oven to 350 degrees F.

Line the tray with parchment paper or grease and flour it.

Swift the dry ingredients together and keep aside.

Take the room temperature and whip it with the brown sugar and white sugar, until its white.

Add in the vanilla extract and egg. Mix until well combined.

Slowly add the dry ingredients into the wet mixture and mix until combined.

Gently fold in the Chocolate chips into the batter at the end.

Pour the batter into the baking tray and bake @ 350 degrees F for 15-20 minutes, until it browns on the top and the center comes out clean when inserted.

Cool on a rack.

Cut into pieces and serve when cool.
