Easy Brownies with white chocolate chips



Who doesn't like brownies...they are an absolute favorite and I like them warm with some vanilla ice cream on the side....ahhhh drooling just at the thought of it!....its sooo good!!

Well whenever I set out to make something..I make sure that I have all ingredients in my pantry....but there are times when I love to substitute and get a similar dish which is yummy too....depends on whats available in my pantry I guess!! :)
Well all of it boils down to whether my kids loved it or not.....they surely like the idea of white chocolate chips instead of nuts....why would they say no to more chocolate right!?

This is very simple recipe I got from watching America's test kitchen.
I adapted it from their recipe, by adding white chocolate chips instead of nuts and cutting the sugar in almost half and using unsweetened chocolate chips instead of bitter sweet, since I had only those in my pantry....





Ingredients:

1/3 cup cocoa powder
1/2 cup + 2 tbsp boiling water
2 oz semi sweet white chocolate chips
4 tbsp unsalted butter, melted
1/2 cup + 2 tbsp vegetable oil
2 egg yolks + 2 whole eggs
2 tsp vanilla extract
1 cup sugar
1 3/4 cup All purpose flour
3/4 tsp salt
6 oz semi sweet mini chocolate chips, you can use regular ones too


Method:

Line a 9 by 13 inch baking pan with tin foil, first across, then side ways...making it easy to lift of the baked brownie from the baking pan. Grease it with butter or spray with cooking spray.

Lower the rack position in the oven to the lowest level and preheat to 350 degrees.

Whisk in cocoa powder with the chocolate chips along with boiling water, until the chocolate has totally melted.

Add the melted butter and oil.

Add the whole eggs, egg yolks, vanilla extract and continue whisking until smooth.

Next add the sugar and whisk until totally mixed into batter.

Fold in the flour and salt into the batter slowly until combined.

Fold the white chocolate chips in the end.

Pour the batter in the lined and greased tray.

Bake until done or until a tooth pick inserted comes out with few crumbs on it, about 25-30 mins.

Use the tin foil to remove the brownie from the baked pan and place on cooling rack.

Cut into pieces and remove from the foil, when cooled.

Serve warm or cold...they are delicious either way...:)
