Healthy Vegetable Semiya Upma - Today's morning breakfast


It only sometimes that I wake up to make some good breakfast other than idlis and dosas. Cereals and bread are a regular, but my kids get bored of that, so I decided to make this today. After all my dance class was cancelled for today morning and I am free, other than doing my son's school project uuugh!!! When will that even finish???!!!
I do make semiya upma from time to time and we all enjoy it very much. A whole lot of veggies make this healthy too, so I tell my kids :) I don't make it too spicy, so that the kids too will enjoy. My husband enjoys nuts in it, so I add cashew nuts too. I guess my husband and kids like this better than regular ravva upma. But I crave for ravva upma sometimes. This is something I like too...and I like it more if its ...how do I say it...in telugu we say...vidi vidi ga...or for rice grainy grainy..I mean if I can see each semiya by it selt...if you know what I mean!!!...so I use less water and add water only if I have to later on.
Me and my kids like eating it plain, my parents ate it with pachadi or chutney, eating it with sugar is also nice and yummy!!!
I made this for 4 adults and 2 kids...I used 1 1/2 cup semiya. Adjust accordingly...I made it for breakfast, but you can eat it for lunch or dinner, when you don't want something too heavy!
It takes only about 15 min from start to finish. I used Bambino already toasted semiya, hence the color brown. If you have regular ones, dry toast it before starting to cook. If you have frozen veggies, it becomes much more easier.
I used potato, green beans, carrots and peas. I would have loved it if I had cauliflower too, but I didn't
;(....You can add any other veggies you like!

Ingredients:

1 1/2 cup semiya
1/2 big onion, chopped lengthwise or julienned
4 green chillies, slit
1 small potato, chopped into small cubes
1/4 cup carrots, chopped into small cubes
1/4 cup peas
1/4 cup green beans, french cut

3 tbsp cashew nuts, broken
1/2 tbsp channa daal
1/2 tsp urad daal
1/4 tsp jeera
1/4 tsp mustard seeds
5-6 curry leaves
2 dry red chillies, broken
1/4 tsp turmeric powder

1-2 tbsp oil
salt to taste
1 1/2 cup water
and some more water if required

Method:

In a pan, heat oil. Add cashew nuts, channa daal, urad daal and let them brown. Add mustard seeds, jeera and let them splutter. Add the curry leaves, red chillies and saute. Add the turmeric powder and saute.Add onions, green chillies and saute till translucent.
Add the veggies one by one, starting with potatoes first. Add some salt and saute. After couple of minutes add the other veggies. Only potatoes take longer to cook than the rest, so I add them first. Add which ever you think take longer before the rest. Salt them as you go. When you think everything is cooked, which shouldn't take more than 5 minutes, add water and let it come to a boil. Add salt and taste. It should be slightly salty to your taste. Add the semiya when the water boils. Mix together and when the water if absorbed, lower heat and cover. If you think it needs more water, add some and cover. They will get cooked in the steam itself.
Serve hot with chutney or pachadi or podi. Enjoy!!!



Tip: If you add more water, it will become sticky all together. I know some people even like it that way too.

From my oven - Hot Garlic Breadsticks !


Rainy day here, that too freezing rain. After the beautiful weather we were having, this cold rainy weather reminds us that winter is not yet over!!! When I saw Srivalli's Thanda mela anouncement, felt happy that I can make some fun stuff for the kids, but what thandas can I make in this thanda weather???
Anyways here are some Hot garlic breadsticks for now. Better enjoy these while the weather is cold, we can think of thanda stuff later!
I always enjoy fresh bread, hot from the oven. Instead of plain bread, made garlic breadsticks which can be enjoyed in this cold weather.
I used fresh chopped garlic and grated Parmesan cheese directly into the flour mixture before making it into a dough. I used about a tablespoon of active dry yeast which made the dough rise beautifully! In the end the breadsticks where crispy and crunchy on the outside, and very soft inside.
I used like 6 cloves of garlic, use so many only if you like lots of garlicky flavor, otherwise use less. I used dry parsley flakes, you can use fresh or even cilantro or coriander leaves for a twist in flavor!

Ingredients:

1 tbsp active dry yeast (1/4 tsp sugar and sprinkle of salt for proofing)
1 tsp sugar
1 tsp salt
1 1/2 tbsp oil
2 tbsp softened butter
3 cups all purpose flour
5-6 cloves of garlic, crushed or chopped finely
1 tsp dry parsley flakes
4 tbsp milk
3-4 tbsp grated parmesan cheese
enough warm water to knead into a soft dough
some melted butter to brush on the top
some garlic powder and parmesan cheese to sprinkle on the top















Method:
In a cup, put some warm water, yeast, 1/4 tsp sugar and sprinkle some salt. Put aside for about 10 min. It should start foaming.
In a bowl, add the flour, salt, sugar, garlic, parsley flakes, parmesan cheese, oil, softened butter and milk. Mix everything together till it looks grainy. Add the yeast water and mix well. Then add the warm water and knead for atleast 10 min into a soft dough. pat some oil on top of the dough so that it doesn't dry out, cover and keep it in warm place for about an hour.
After an hour, pat it down and let it rest for 5 min.
After 5 min, take the dough onto a floured surface and pat it down to about 3/4 inch thick and cut it into pieces. This is how I made it, but you are free to make sticks how ever you like. Lay them on a greased baking sheet and let them sit for another 1/2 hour in a warm place. I left them in the oven. Before baking brush melted butter on top. Sprinkle grated parmesan cheese and/or garlic powder on the top. You can use garlic salt too. I did half of each kind.
Pre-heat oven to 375 degrees and bake them for about 20-30 min or until brown.
Serve hot or warm with or without butter. Enjoy!!!

Sago Muruku for ICC - April


I am still struggling with my computer...somehow I managed to download my pictures for now...
This old laptop has different editing software...now thats a struggle too....problems and problems....

Anyway, this month ICC was Sago Muruku. I had made this last month itself, but transfering the pics from the other laptop to this one took me so much time!! But the bright side was the murukus came out good and tasted yummy and are all over too!!! Everyone in our house loves murukus, make them anyway, they will be gone fast. And we were having friends coming over the Good Friday weekend...so they were the tasters for this recipe!!! Not all of my murukus came out as perfect as they look above...but they surely taste good!!!

The only part which was little scary to me was bursting of the sago, this had happened once to my friend while making sabudana vada and she got a few 2nd degree burns( I think or 1st degree, don't remember) on her arms. For this reason I made sure I soaked the sabudana well. According to ICC, it was to soak for 3 hours, but I think I soaked it for 5 hours atleast. Other not so common ingredient used was fried gram flour, known also as buni hui channa daal or putnalu pappu. It is found here in US in the daal form, I powdered it at home. Other than that, rest of the ingredients are the usual ones.

Ingredients:

Rice Flour - 2 cups
Besan flour - 1/2 cup
Fried gram flour - 1/2 cup
Sago - 1/2 cup
Salt to taste
Curd - 50 gms (half of half cup)
Chilli powder - 1/2 tsp or as per taste
I added a tsp of jeera for added flavor
Oil for frying

Special Utensil needed: Muruku Achu

Method:

Soak Sago in Butter milk for 3 hrs ( I soaked it for 5 hrs), please ensure that you soak it enough else you may risk having the sago burst.
Make powder of the fried gram in a dry grinder.
Mix all the flour together, heat 50 gms oil, mix to the flour along with salt and chili powder. Then add the buttermilk soaked sago slowly and knead to a chapati dough consistency. I think my sago soaked up most of the buttermilk, so I added some more water to knead it into a dough, and my dough was little on the softer side.


Heat oil for deep frying.In the muruku achu, add the dough.
I made the murukus using the achu onto the back of the holed spoon, slotted spoon (gharete), then slowly dropped them into the heated oil.




Cook on medium flame to ensure the muruku is cooked well. Drain on napkin and store in an air tight container. They might not be crispy when they are hot, but they will crisp up when they cool down.
Serve when they are cold, with tea or as a snack. Enjoy!!!



Notes:
Ensure sago soaks in buttermilk well and is soft or else it will burst when you press it down in hot oil.
Cook on medium to ensure even cooking.
Fried Gram flour is fried channa dal that is available commercially. It is general sold as the dal, we have to powder it at home. This is also referred as chutney dal as it is used in making coconut chutney.

Computer problems

Hi guys...
Sorry I couldn't post for the last few days..I am having computer problems....The keyboard and touch pad stopped working all of a sudden on the new laptop!!!!

Dahi Vada - Andhra Style

Dahi vada is made differently in the north and the south. I am not sure if its made this way all over south India or only in Andhra, but this is how its made in Andhra for sure.
I can eat dahi vada for breakfast, lunch or dinner. I always been a fan of dahi vada, but my luck, no one eats dahi vada in my house, not my sons nor my husband. They will eat plain vadas or sambaar vada but not dahi vada. So I very rarely make this. I made this for pot luck a few months back and it has been sitting in the archive waiting to be posted.
I found another easy trick to make a few for only myself when ever I make vadas at home :).
To make dahi vadas, the plain vada is soaked in water with lemon and salt for a few minutes before putting into the tempered yogurt. This makes the vadas very soft and succulent.
So, when there were a few plain vadas left over the next time and I got to them before anyone else did, this is what I did -- microwaved it for 15-20 secs, just to get them hot, soaked in some water with some salt and lemon, let them sit in it for 5 mins, tempered little bit of yogurt and added the vadas to that. It was that simple, easy and instant too...
Therefore I recommend this idea to anyone who want instant dahi vada! :) and I love eating it with boondi and chilli powder sprinkled on the top, crunchy, soft and soury :)

Ingredients for tempered yogurt:

1 cup of plain yogurt (sour one would be better, but if thats not available, just add lemon or amchoor powder to make it sour)
some water to make it into semi-thick buttermilk
salt to taste

1 small onion, chopped
2-3 green chillies, chopped
1 tbsp chopped coriander

1/2 tbsp oil
1/4 tsp mustard seeds
1/4 tsp jeera
pinch of hing
1/4 tsp turmeric powder
2 dry red chillies, broken
4-5 curry leaves, chopped or whole

Method:

Take sour yogurt and add water to make it into a semi-thick buttermilk. If you don't have sour yogurt available then simply add lemon or amchoor powder to the yogurt to make it sour. Add salt and mix well.
In a tempering pan, heat oil, add mustard seeds and jeera. Let them splutter. Add red chillies, curry leaves, turmeric powder and hing. Saute for a few seconds and then add the onions and green chillies. Saute for a minute or two and add it to the sour buttermilk. Add the chopped coriander leaves and mix well. Put this mixture in a wide bowl which will fit all the vadas too.
In another bowl, add water, little salt and little lemon.
After frying the vadas, remove them directly into the water mixture. I usually leave the hot vadas in the water mixture until I am ready to remove the next batch of vadas from the oil. By this time, the vadas soak some water and swell up. Take the vadas from the water mixture and add them to the yogurt mixture. Spoon some yogurt mixture on the top. Make more water mixture as it gets used up.
Serve cold with boondi or anything crunchy and chilli powder sprinkled on the top for extra spice. Enjoy!!!

Vada Sambaar / Sambaar Vada

This is one of my husband's favorite dishes. he orders this when ever we go to any vegetarian or Udipi restaurants. But nothing's better than home made vada and sambaar.
Enjoy Sambaar vada with vada dipped or submerged in sambaar.
