Soft Buttermilk Biscuits

I am always on the look out for quick bread, be fruit breads or plain bread. I just love the smell of fresh bread cooking in the oven. In the same way I even love soft delicious biscuits like the ones they serve at KFC. I always never seem to get enough of them. I can eat them all the time. For this reason I keep looking for the perfect recipe.

This time I came across the recipe, which yeilded almost perfect biscuits.
They were soft inside and crunchy outside. Too good, not the exact recipe what I am looking for but very good biscuits indeed.

Biscuit are good to be eaten with any dish actually. I especially like them with the crunchy KFC chicken, but they go good with any gravy dishes. They are a perfect side dish on a dinner table.
This is very easy to make recipe. Doesn't even take much time.
Few changes I made to the recipe are, instead of pre-made buttermilk, I used powdered cultured buttermilk powder. Directions on how to make the needed amount of buttermilk were given on the box.
Rest of the recipe is almost the same.

Ingredients:

2+1 Cup All purpose Flour
a pinch of baking soda
3 tsp baking powder
1 tsp salt
1 tbsp oil
1 1/4 cup buttermilk (I used 5 tbsp of cultured buttermilk powder + 1 1/4 cup water)
some butter

Method:

Mix the flour, baking soda, baking powder and salt together.
Mix in the oil and buttermilk together with the dry ingredients. The dough will be very wet and sticky.
Slowly incorporate the rest of the flour, using only as much as you need to form a soft, less sticky dough.
Place the dough on a flat surface and knead by folding in with the heal of your hand. Knead atleast 10 times.
Roll out the dough to about 1/2 inch thick and by using a round cookie cutter or any other form of cutter, cut rounds and place in a pre-greased baking tray, close to each other.
Cut slivers of the butter and place on top of each round.
Bake in a pre-heated oven @ 450 degrees for about 15 minutes.
Just before taking them out of the oven, brush with some more butter, for better browning.
Serve warm with jam or butter or Crispy Chicken like KFC.
