Vegetable Fried Pasta ??!!
When you make rice with vegetables then we call it vegetable fried rice. So why not call pasta made it vegetables and Indianized... Vegetable fried pasta or Pasta Biryani???
I used to make this dish long ago from time to time, but my dear Husband got bored of it and then I make it very rarely. It just like vegetable fried rice but just with pasta and all the goodness of the veggies.
Its a good after school snack or can also be eaten for lunch or dinner.
My kids will eat it anytime. :) Thats what is needed right, for the kids to eat!!
I Indianized it by adding biryani masala powder and little bit of garam masala too with ginger-garlic paste. Any kind of Pasta can be used. I sometimes make it with angel-hair pasta or with penne too. This time is used medium sized shells.
Ingredients:
3 cup uncooked pasta
2 cup of veggies like cauliflower, carrots, peas, red bell pepper, green bell pepper, beans
1 small chopped onion
3 green chillies
1 tsp chopped coriander leaves
Dry Garam masala:
1-1 inch piece cinamon stick
3-4 cloves
1/2 tsp jeera
1/2 tsp shahi jeera or kala jeera
2 bay leaves
3 cardamom pods
1 tbsp ginger-garlic paste
1 tbsp birayni masala powder ( I used homemade, you can use readymade too)
1 tsp garam masala powder (I used homemade, you can use readymade too)
salt to taste
1/4 tsp turmeric powder
2 tbsp oil
Method:
Cook pasta to al dente with salt. Drain and keep aside.
In a wok or a pot, heat the oil and add the dry garam masala and saute before adding the choped onions and green chillies. Then add the ginger-garlic paste and saute. Add the veggies and fry them with little salt. When they get almost cooked add the biryani masala powder, turmeric, garam masala powder and cook a little before adding the boiled pasta. Mix everything together nicely and cover. Let cook for 5 minutes before adding the chopped coriander. Your vegetable fried pasta is ready. Serve hot and can be eaten with raita or plain yogurt. Enjoy!!!
