Simple and Easy Chinese style egg fried rice
Ok so, this is neither the traditional Indo-Chinese style fried rice nor the authentic Chinese fried rice :)
This is my way of making it or rather my Mom's way of making it and we always ate it and liked it. You can say its a mix up of both and you can make it as spicy as you want or eat it with sriracha(the rooster sauce :)) on the side to make it spicy. It is simple and easy to make and goes well with any Indo-Chinese dishes like chicken manchurian or gobhi manchurian or anything else chinese. I like to eat it sometimes just plain, so this is another one which I make with left over rice. Though my younger son doesn't like vamu annam, he likes this since it has carrots and peas. Today I had only carrots and peas in fridge so I added only those, but corn, beans and broccoli also can be added. It will not only make the dish yummy and delish but also nutritious and healthy.
Ingredients:
2 cups cooked and cooled rice (left over rice can be used)
3 pods of garlic, chopped tiny
1/4 piece of 1 large onion (this is what is used, you can use 1 small onion too)
2-3 green chillies, either chopped or slit
1/2 tbsp sesame oil (I use this for flavor, you can omit this, then use regular oil in this place too)
1/2 tbsp regular oil
1 green onion or spring onion, chopped
1 egg (optional)
2 tbsp chopped carrots
2 tbsp green peas
(or you can use frozen chopped carrots and peas)
Salt to taste
1/2 tsp soya sauce ( I used dark soy, so only 1/2 tsp, if you have light you can use more for the desired color)
Method:
Heat both the oils together in a pan. Add the egg and beat it till cooked into tiny pieces. Add onions, garlic, green chillies and cook till onions turn transluscent. Add the chopped carrots and peas, little salt and saute till cooked. Add the rice, little more salt and the soy sauce and mix everything together until properly mixed. Cover and cook for 5 min till rice is soft. Add the chopped green onions and turn off the heat. Enjoy hot!!
Tip: Be careful how much salt you add, since soy sauce is salty too and the dish could become too salty. Add less, you can add more later. You can always add salt, but you can't take it out :).

ReplyDeleteYes you can ...but when you do it that way...all the egg sticks to the rice....i like it separate and not stuck to rice and veggies....
